One of the most talked about lockdown delights on social media are aMagwinya, Makwenya or Fat Cakes.
Here’s a recipe from Twitter user @PayDayMillionaire
- 1 packet of yeast
- 2 Cups lukewarm water
- 1/4 cup white sugar
- 2 teaspoons salt
- 7 Cups flour
- Mix lukewarm water, sugar and yeast
- Let it stand for 5-10 minutes until it starts forming bubbles
- Sift Flour and Salt and add water and yeast mixture
- Let the dough sit for at least 30 minutes until ikhukhumale (it starts to rise)
Now for the Fun Part – preparing the dough for the pan. These are not your usual round amagwinya. They are square….
For this part: you must have at least a cup of flour. Sprinkle some flour over your surface. Rub both hands in the flour and scoop a batch of dough and pat the flour around it with your hands and put on surface already sprinkled with flour.
I start heating my oil while I am rolling and cutting the magwinyas out. As soon as it’s hot enough I put them in the oil (Note: to avoid your magwinya forming a big bubble on one side, turn them over in the oil regularly until they look crispy and golden outside)….and voila
